Dry PX Wine – A Rare Achievement

Few wineries have dared to craft a dry wine from the Pedro Ximénez grape, renowned for its natural sweetness. Fermentación Lenta 2023 is a groundbreaking expression, showing what can be achieved when innovation meets tradition.

Production:
Hand-harvested PX grapes are left to over-ripen on the vine for 21 extra days before pressing. The must is added gradually to French oak barrels (30 litres per day) — a slow, controlled process that allows complete fermentation of sugars, an extraordinary feat for this variety. The wine is then aged for six months on lees with gentle battonage, gaining richness and texture.

🌡️ Temperature: Recommended temperature to enjoy: 7ºC–12ºC.
🍷 Glass: Wide and open glass, but always in moderate quantity.
🛢️ Aging Potential: Under optimal conditions it can exceed 15 years.


Tasting notes:
Nose: The nose is marked by the French Oak, which is attenuated with notes of raisins and dried plums. It lacks oxidation. There is no stridency, but harmony of all the elements. The natural aromatic characteristics are distinctly unique.

Palate: In mouth, the non-existent alcoholic sensation, in spite of its 14 alcoholic content, is surprising. It is full-bodied and attacks all organoleptic perceivers, since from the tip of the acidity to the aftertaste of wood and ripe fruit, it is persistent and rich in plenitude.
