A Semi-Sweet Late Harvest White
This bottling is a testament to the richness of PX when handled delicately. Grapes are left on the vine for 21 days after normal harvest, concentrating sugars while retaining a refreshing acidity.
Production:
Fermented under temperature control to preserve residual sugar, then aged for four months on lees in old American oak barrels. Only around 25,000 bottles are produced each year, depending on weather conditions, making this a rare treat.
🌡️ Temperature: Recommended temperature to enjoy: 7ºC–12ºC.
🍷 Glass: Wide and open glass, but always in moderate quantity.
🛢️ Aging Potential: Under optimal conditions it can exceed 25 years.
Tasting notes:
Nose: Aromas of figs, raisins, and baked pastries, layered with soft notes of fermentation and oak spice.
Palate: A silken balance of natural sweetness and fresh acidity, with flavours of honeyed fruit, ripe plums, and a whisper of oak.
