Bill Phil is a triple-distilled peated Irish single malt from Great Northern Distillery, independently bottled by W.D. O’Connell. It combines peat smoke with sweet biscuit malt, orchard fruit and citrus. Named after founder Daithí O’Connell’s great-grandfather, William Philip, it is released in batches that share this distinctive smoky character.
Tasting notes:
Nose: Bergamot with light peated smoke fills the senses. Distinctively fresh vibrant notes of cereal slowly emerge with waves of poached pear and earl grey tea.
Palate: Buttery biscuit with waves of lightly smoked malt, banana bread, sweet cassia, and a hint of bergamot.
Finish: Citrus oil, and a wisp of smoke
