Boann Single Pot Still PX Cask explores the richer side of Irish pot still whiskey, combining Oloroso sherry maturation with a Pedro Ximénez finish. Distilled from locally grown malted barley, unmalted barley, oats and rye, it brings together dried-fruit sweetness, dark chocolate and distinctive savoury notes.
Raisins, figs and molasses lead into honeyed sweetness, pepper and an earthy caramel finish. The cask selection adds another point of interest: some of the finishing vessels are chestnut butts with decades of service in a PX wine solera, giving this expression an unusual maturation story.
Tasting notes:
Nose: A decadent nose bursting with aromas of raisins and figs, beautifully backed by molasses, sweet caramel, and a touch of leather.
Palate: A sweet and savoury palate with a wonderful mixture of honey syrup, fine dark chocolate, crispy bacon and cracked white pepper.
Finish: Long and rich, with earthy caramel flavours that stay with you long after you’ve finished.
