The Flintlock is named after a pistol the makers found hidden in the rafters of their 17th-century Tasting Room during renovation. The pistol dates back to the 1790s, a time of freedom fighting in Ireland, showing that independent thinking has always been important around here.
To create The Flintlock Batch No. 2, the makers selected three single malt casks, each from the same distillery, from their library of Irish Whiskey flavours. Each single malt was chosen based on its unique flavour profile and attribute. Then, just J.J. Corry would have done in his shop, they married them together to create their own unique house style.
Tasting notes:
Nose: Gathering clouds of classic Irish Whiskey stone-fruit aromas - golden plums and ripe pears - carry with them wild flowers reminiscent of the fertile Burren in County Clare. There is an intense sweetness too, with tupelo honey and a dusting of coconut.
Palate: The central orchard flavours start with pale green apples before shifting to ripe apricot and a hint of dark plum. There is sweetness with complexity: vanilla sugar, crystalized ginger, and high-cocoa dark chocolate studded with honeycomb. There are also earthy notes - umami mushroom, toasted sesame oil and beetroot, along with sphagnum moss and fertile dairy pasture.
Finish: There is a fresh spice and pepperiness - like nasturtium and other edible flowers. Wildflower honey returns along with more earthy notes … like a day in a peat bog cutting turf.
