This liquid begins its maturation process in flame charred ex Bourbon American oak casks. It is finished in premium first fill Oloroso casks from Montilla, a small town found in the rolling hills of the Spanish countryside. Glendalough chose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land. It is encapsulated in the liquid when we put our Irish whiskey in these slow toasted Spanish casks for aging.
This liquid is bottled from the cask at 61.3% ABV in an homage to the heritage and original craft of distillation, which has been part of Irish culture for centuries.
Tasting notes:
Nose: Aromas of rich dark fruits, nuts and citrus with notes of nutmeg.
Palate: Sweet and smooth with cherries, honey & peppercorn spices.
Finish: A long finish with warming ginger spices that linger on the palate alongside hints of nuts.
