A truly unique wine, Fino Jerez Seco Serie 3 represents an extraordinary evolution within the Ximénez-Spínola range – the only known fino-style wine made entirely from Pedro Ximénez grapes.
Production:
Originally intended to become dry white PX wines, a selection of musts from the 2005–2015 harvests underwent an unexpected transformation, naturally developing a veil of flor – the yeast layer characteristic of fino sherry. Embracing this rare occurrence, Ximénez-Spínola carefully selected nine exceptional casks for this third release (Serie 3), first ageing them in partially filled French oak barrels to preserve the flor, before a second maturation in American oak casks.
This dual ageing process results in a wine that bridges tradition and innovation – combining the finesse of biological ageing with the depth of carefully managed oak influence.
Overall, a rare and captivating interpretation of fino – pure harmony and pleasure, offering both the freshness of biological ageing and the singular identity of Pedro Ximénez.

Nose: Delicate and expressive, with subtle notes of almond, fresh dough, and a gentle saline character layered over faint dried fruit tones.
Palate: Light yet unctuous, with remarkable balance – the typical fino freshness enhanced by an unexpected acidity and softness, and a surprisingly low perception of alcohol despite its 15% ABV.
