A great new entry from Tipperary, distilled from their own homegrown barley (Spring Barley - Olympus), grown on their land, matured in a traditional farm shed, right beside the farmhouse. The cask was sourced from Bodegas Faustino in Spain and was previously used to age Rioja wine.
Tasting notes:
Nose: Abundance of Soft Fruits, almost a Victoria Sponge sensation with Strawberry and Raspberry notes and hints of Dried Grass.
Palate: Deep and Round with Raspberry notes and hints of Toasted Marshmallow.
Finish: Medium to Long in the Finish
