Skellig Single Pot Still - Six18 Step Collection

Skellig Triple Cask Single Pot Still Irish Whiskey is a limited release and is the first expression in the Six18 Step Collection. It celebrates the most unique style of traditional Irish Whiskey – Single Pot Still. The use of both malted and unmalted barley in the mash bill, combined with triple distillation in copper pot stills, gives this whiskey the enduring silkiness for which the Single Pot Still style has become globally renowned.

This limited release Irish Whiskey is matured in ex-Bourbon barrels before being finished in Pedro Ximénez Sherry casks in homage to the centuries of maritime trade between the Skellig Coast and European ports, which often saw boats passed the Skellig Rocks carrying sherry from the bodegas of Jerez. Some of this whiskey was also briefly finished in a former peated cask to give it a mos (slightest hint) of peat to reflect the geography and aromas of the Skellig Coast, with its hectares of raised Atlantic peatlands. Casks were carefully chosen from those maturing at the Skellig Six18 maturation warehouse – Atlantic Aged.
